Rohit Ghai’s New Restaurant: Discover Vatavaran in Knightsbridge, London | My London Times

Acclaimed Michelin-starred chef Rohit Ghai and business partner Abhi Sangwan have opened a new luxury Indian restaurant, Vatavaran, on Beauchamp Place, aiming to elevate the dining scene in Knightsbridge.

Last night, guests were treated to an exclusive preview of the venue, which, at first glance of the exterior, may seem unassuming. Vatavaran, meaning “atmosphere” in Sanskrit, promises a remarkable culinary journey inspired by the breathtaking landscapes of the Himalayas. Designed as a sanctuary for the senses, Vatavaran warmly invites guests to immerse themselves in a constantly evolving, multi-sensory atmosphere that beautifully blends nature with fine dining. Each of the restaurant’s four distinct levels showcases a unique element of the Himalayan landscape, offering an artistic and culinary adventure that is truly unparalleled.

Rohit Ghai and Abhi Sangwan, known for their success with Kutir in Chelsea, and the iconic Manthan in Mayfair, have collaborated once more to bring this unique Indian concept to Knightsbridge. Chef Rohit Ghai, renowned for his modern take on traditional Indian flavours, has curated a menu that captures the essence of the Himalayas through innovative techniques and seasonal ingredients.

The theme of ‘atmosphere’ will also be more literal, as Ghai and Sangwan pay special attention to the atmosphere of the restaurant and bar, programming live music experiences on Fridays, Saturdays and Sundays to ensure a vibrant and eclectic environment.

The Himalayas hold a profound cultural and spiritual significance, and we’ve worked tirelessly to translate that into a culinary experience that will transport our guests to this magical part of the world.”

DESIGN

Abhi Sangwan, who led the design of Vatavaran, integrates nature into his restaurant spaces. With Kutir reflecting wildlife and Manthan inspired by the ocean, Vatavaran draws from the ethereal landscapes of of the Himalayas. Starting at the ground level, a blue-toned atmosphere evokes valley streams, featuring floral wallpaper and artwork.

The mezzanine, named the Orangery, is inspired by mountain ridges, filled with natural light and showcasing an open kitchen. The first floor highlights green accents resembling higher forests, offering an intimate dining experience with heavy curtains and white linens.

At the top, Shikar lounge and cocktail bar captures the summit with deep red hues and a textured ceiling mimicking glistening snow. Founders Rohit and Abhi work closely with Collective Design to ensure every detail reflects their vision of the mountains and nature’s beauty.

MENU

Ghai’s global culinary influence includes notable projects like Rivayat in Marrakech, Aangan at Shangri-La Al Husn in Muscat, and Iksha Ikska in Doha, along with his renowned work at London’s Gymkhana.

At Vatavaran, guests can enjoy signature dishes featuring rare Himalayan ingredients. The seasonal menu includes highlights such as robata-grilled wild tiger prawns, balchao guinea fowl with smoked beetroot, and slow-cooked lamb shank biryani. Other notable dishes feature Amritsari kulche and choley, alongside a whole rotisserie masala chicken. Unique desserts include garlic almond cannoli and sous-vide pineapple with chutney, all crafted for a memorable culinary experience.

DRINKS 

The cocktail menu by Abhi Sangwan invites guests to explore the flavours of India’s beloved sweets through modern mixology. Enchanting options include gulab jamun with spiced rum, jalebi infused with saffron and arak, and besan ladoo with cardamom whisky, all with hints of jasmine.

At Shikhar, the cocktail bar experience is unique. The menu, designed like a deck of cards, offers one-of-a-kind cocktails crafted tableside by a mixologist. Those who draw the “Joker” card can create a personalised cocktail with expert mixologists, which may even feature on a future menu, honouring its creator. Shikhar is a sensory celebration of India’s sweetest delights, brought to life at your table.
